I’m not sure if you are talking about the HDR from your iPhone or which software processes it better. A few thoughts if you are using the camera app on your iPhone the HDR is either HEIC or jpg so it’s compressed. From reading on data from Apple the hdr is not made by shooting multiple images at different exposures then combining them but rather more processing from the iPhone. There are camera apps which do real multiple image HDR in raw like Halide. To use them I would suggest a tripod. And yes it is amazing how good phone images have gotten.

But the real power of LightRoom , Aurora , On1 etc is to merge multiple images shot at different exposures to get an image as close to what your eye sees rather than the compressed images you get in dynamic range . I have all 3 and prefer On1.

On the iPhone 8 Plus the HDR image is made from 3 - under, on, over images as in this article.

At 2+ years ago trip to Antarctic I rented a great new Sony DSLR body to use with my classic
Minolta 28-135 “handshake” lens and some great images, but also some of best with iPhone 8. Last year to Arctic and iPhone 8 Plus with also Sony RX10 IV. This gang from about 1/2 mile away via Sony @600mm. Not possible iPhone. But also didn’t have to fumble as years ago with 2-4 fixed lens. Zeiss lens with Sony “bridge” means a bridge to best images?

Here is an example of three images from Aurora, exposed at -1, 0, +1, combined at night which would have been difficult to compose from one image. A good benefit in Aurora is the open to "Open in Photoshop" which makes it very easy to begin further editing. It will pick up whatever editing program you use.

So here are a couple of images tone mapped with Aurora using a single photo and a single pass.

iPhone 8 Plus can shoot and save auto HDR and "normal" photo in camera setting so why not?

Exactly, as long as you have the space and don't mind slowing down your camera. Save that "normal" as a RAW instead of or in addition to a JPEG. HDR will always be a JPEG because RAW is, well, RAW.

As for that first question, LR or Aurora; my answer is both. LR is great at honesty. Aurora is great at exaggerated colors and textures. Have both. Like you said, "why not".

The top pic does look to me to have more shadow recovery, contrast , clarity, & vibrancy or saturation in it. I'm guessing you tried to get the same results in LR?

Both were processed only in LR. The waterfall was shot just after sunrise in subdued light. Even at f2.8 the plane of focus is pretty thick (DoF). I would have preferred the foreground to be a bit more out of focus, but the tiny sensor of the Nikon AW1 isn't much better than a video camera at isolating the subject; and for the same reason. It was shot RAW and converted into a JPEG in LR.

The kayak picture was shot early afternoon in harsh light by comparison. The lighting was superior in the first photo. Lighting is everything. For whatever absent minded reason I only shot the JPEG in the camera. That was re-processed into another JPEG in LR. The resulting file was then re-compressed into a much smaller JPEG for posting on FB. I didn't bother looking for the full size file on my external drive. The Nikon AW1 is 14MP. The waterfall is the whole 14MP image whereas the kayak shot is about 4X5 (~3MP).

I prefer LR for honest images and HDR for exaggerated colors and textures. Both of those options are right and both platforms are desirable for their own strengths. I have also posted a couple of HDR [Aurora] shots.
