Old mill: color or sepia?

Sepia, but use a brush tool to bring out shadow detail on the wheel.

I am biased, so take my selection with a grain of salt ... I have been taking pictures for over 70 years and since the advent of color film, mostly slide film, I have shot in color ... the one in color in my preference ... occasionally I use B&W for silhouettes . Thanksa for sharing and the best to you.

I like the in between but my first thought about the original post was increase the contrast of the sepia and try to increase the sepia tone.

I like them both. As was previously mentioned, throwing the background out of focus would greatly enhance the image.
