Okra, Potatoes, & Sausage!

Another different side dish, be creative! Photo 4 shows what I used in this dish: potatoes, red onion, okra, Korean BBQ sausage, (use any sausage) 1 can Pastene cherry tomatoes, 5 garlic cloves, 3 bay leaves. In photo 5, cut only as shown the protruding stem tips off okra.

In photo 1 cut red onion rough using whole onion and sauté in olive oil about 2 1/2 to 3 minutes. Next add rough cut potatoes adding 1 14.5oz can of cherry tomatoes and cut sausage with whole okra add and 1 cinnamon stick. Also, sprinkle chopped garlic all over veggies.

Cooked in my pressure cooker I added 1/2 can of beef stock seasoned well with herb de provence, oregano, a sprinkle of red pepper flakes, and add a 8oz can of tomatoes sauce photo 2. Mix well uncovered and temp on high, when liquid starts to boil cover and when rising valve reaches first ring lower heat and cook under pressure for 12 minutes. leave covered move pot to side of stove off burner to rest about 5 minutes.

Next, if valve is still up depress all the way to release pressure and open cover photo 3! You do not have to use a pressure cooker to make this side dish, any pot will do. But, it will take longer.

Please, use your favorite favorite spices and herbs, I do not use any salt, but of course you can . . . Enjoy! CIAO, AP

Thanks for supper idea last night. Used okra, tomatoes, and new potatoes to make a low cal soup. Used the saved calories for chocolate!
