I agree with Dingle Harbor. And many other coastal areas of the northwest. Rick Steves Tours are great, but photography is grab as you can.

Been there twice, plus once to N. Ireland and predicting Irish weather is similar to giving you next week's lottery numbers. Mid-May thru June is a good bet, plus flowers are in bloom, but there is a reason so many pubs... for the rainy days.

We go to Kerry often as have family there. You’ve had great advice so far.

I would suggest Conor’s Pass just outside Dingle it has some dramatic views and there will be sheep aplenty clinging precariously to the rocky crags as you descend toward Tralee. Take care though, it’s virtually a one lane road with passing places every so often. iPhone pano attached from a couple of years ago before my DSLR - it was on a glorious Sunday in early April, and a radio sports commentator said as we drove up “And we join you from Austin Stack Stadium, on a day borrowed from August...”

If you do self-drive, be aware that tour buses typically go round the “ring of Kerry” clockwise. Some like to travel counterclockwise to avoid getting stuck behind them, so they are not on the side of the road with any scary drops and so the driver can get good views too.

I live in Dublin but can confidently suggest the clarity of light in the west is unsurpassed in these Islands. While the west has the highest rainfall, it is something of a myth to suggest rain is constant!
The Northwest, Donegal in particular will provide ideal for 'sheep photography' in a natural habitat. As a less visited part of the country, one can find it less expensive than better known areas.
