For the type of shots you want to take, I'd go with a point and shot camera. Let it do all the work and it will be a lot less for you to carry all over the park. When you ride the rides it will be a lot easier to deal with the point and shot vs. a heftier camera. I know you would like to use your cannon, but after a few hours carrying it around with all those kids, you'll wish you had went small.
