Have been reading UH for a few weeks and researching cameras. I decided to purchase a Canon 80D with 18-135. The price just jumped $200. Is this price fluctuation the norm in the camera industry?

I use an Amazon plug-in called Keepa that tracks Amazon Prices. Screen grab attached. Looks like the price just went back up after being down through the holidays.

Yep, sales are over, for now.
But I just checked and the Canon Store's refurbished section has the 80D with 18-135 for $1199.20 and in stock. There are three versions of the 18-135, this bundle has the "18-135mm f/3.5-5.6 IS USM" version. The latest and by many accounts the best of the three.
Canon direct refurbished come with a one year warranty just like new. I bought an 80D body in Nov and it looks and acts like new in box.

I ordered a 80D on Thursday for the holiday price of $999, yesterday it was up to $1099. Holiday pricing is now off, thus the increase. You can take a wait & see approach to see if there will be another sale sometime in the near future. Good luck.

If you buy during the holidays you get rewarded. If the holidays pass, so do the discounts. Canon should reduce again sometime in the coming year. Not sure when? Nikon usually has two additional sales, one in the spring and one in the fall.

Unfortunately you didn't take advantage of holiday pricing. Don't know when they'll be as low again

Holy cow I got the refurbushed 80d with the 18-55stm right after black fri and it was under 700 talk about a markup

Yes right from canon. What was weird is the body was more than the body and lens. Anyway just checked it's now $949 for the same thing but their out of stock
