Did you start with a squashed strawberry in your scanner...
and then played with the colours?
no, I started with a fresh strawberry that laid on the scanner bed for 45 days+
Interesting- was the blue colour part of the decomposition process
or did you add it in post-processing?
after the initial balance on the fresh strawberry there were no more pp color changes, it turned blue/black.
The main scanographs that I have done are of stone agates which have been sliced.
Occasionally I've done a "reflective" scan, but usually, I scan it like a negative and shine
light through the agate instead of off the agate.
try making both a reflective and transmissive scan then composite/mask in post processing
