That's absolutely true! NC is a visual playground, just waiting for photographers to enjoy.
Part of the tie-in is the annual flock to the Blue Ridge Parkway, over in the mountains. Thousands of visitors go there to hang out and ooh and ahh over the leaves, as they explode into a crazy display of color. So this is as much about tourism as it is photography...

That's one of the reasons, but far from the most important ones, that my wife and I are considering moving there when she retires. Beautiful state!

If you end up in TN, go to the Orchard Restaurant. Great food and everything made with apples. After the meal walk around back to the lower level where the orchard store is. Oh Boy!
It is going to be crowded. If you camp, go to exit 20 off I40. You will be in the Jonathan Creek area, not far from Waynesville. There are 3-4 campgrounds which usually have some availability. If you stay at any of those, ask about the shortcut over the mountain (not for the faint of heart) which will bring you into Smokey Mountains Nat. Park right near Parson's Creek Chapel and the Elk Meadow.
If you go in October, you might be treated to display of ice from overnight mist especially in the area between Mt. Mitchell and Asheville.
Also, try for the panoramic view from Mt Mitchell (highest peak east of the Mississippi) which includes parts of 7 states. If possible, get to Clingman's dome for a sunset view. WONDERFUL!
My personal favorite is the Joyce Kilmer Forest, followed closely by Cade's Cove.
If you have interest, the "Tail of the Dragon" is a great ride and if you are lucky, you might find an antique/new automobile or motorcycle rally going on there. Great action shots.
Lastly, if you are interested in white water sports and zip lines, look into the Nantahala Outdoor Center (NOC).
In reality, there is an abundance of photo opportunities through every season of the year. I really like the Spring Flower tours. Flame azaleas in bloom at most of the domes in the early spring.
