But it really doesn't matter.. film or digital. It would be similar comparing a 35mm film camera shot with one from an 8x10" film camera.

The difference is magnification

If you enlarge both to, say, 16x20" print... the 35mm or FF digital image would be magnified more than 16X... while the 8x10" film enlargement is 2X magnification.

But, sometime try shooting sports or wildlife with an 8x10" sheet film camera!

Different tools for different purposes. You wouldn't typically use a sledge hammer to drive a carpet tack. And you likely wouldn't want to use a tack hammer to drive a railroad spike!

Having used a 8x10" View Camera for copy work I would not even consider trying it for sports or wildlife, other than a static portrait in either. A 4x5" is no picnic either. What focal length would one choose for photographing flying geese with a 8x10" camera? A normal view for that format would be about 13.75 inches or 325mm. For reach, insane.
