How essential are firmware and software updates?

Mostly I only look for updates when something strange occurs, that and when i buy the camera.

I don't think updates are as much of a problem with new cameras as there could be software revisions between the time it was manufactured and purchased by the end user, but a lot of company's, including Microsoft, Adobe, and sometimes Canon don't tell you what they are updating and what the update will do until after you download and install the update
. I recently downloaded an updated driver for my Canon photo printer, and the next time I used it there were some changes that drove me nuts--admittedly that may be a short trip 
. Now do I try to uninstall the update, re-install the original software or just live with it

Believe me, keep your cameras with the latest version and updates. The performance will be superior.

If your camera stops working with your operating system (Windows or Apple), or you computer stops working, look into updates. Personally, I do them all shortly, but not at first, after they are released. YMMV. Best of luck.

Nikon and Canon typically fix bugs in the firmware and add support for new cameras in their software.
Other brands do that, too, but some put more emphasis on feature enhancements. Panasonic is one of them. They've added many new features to the GH4 since its debut. They've already announced two firmware enhancements for the GH5, and that camera is not even out yet.
The modern camera has powerful computers in it. Regardless of what you own, you should check for updates on a regular basis, or sign up/register for email notifications.
Don't forget that lenses contain firmware, too. Updates fix problems and expand capability and compatibility with new bodies.
