I would like to get back into photography after a lengthy absense. I have been looking at these two cameras and would appreciate your thoughts. Most of the photography would be nature related ( national parks, landscape etc.)

I am a Nikon shooter and think the review at the link below is pretty fair. If I was starting out and intended to do video, the Canon would be a no brainer. Strictly for still photography it would be a toss up and I would have to handle both. Then I would grab whichever was more comfortable.

Radar, welcome to the hog. There are a lot of opinions here. You can go to the search and type in Nikon 7200 vs Canon Eos 80D. Read and draw your own conclusions. If you have a camera store near you, go there and test both. There are advantages and disadvantages in many cameras. Pick what feels good to you. Both are very good. Happy shooting!
I went with the D7200 because I had a bunch of Nikon Lens. If starting from scratch I would choose the Canon. Just my thought.
Another consideration: do you have friends / family that use one of these two models or brands? Having someone readily available familiar with your camera can be a help.
The OP says he would like to get back into photography after a lengthy absence. We don't know if he still has any gear when he was into photography. If he is starting from scratch again, with no lenses, he should read comparisons/reviews. Both the Canon 80D and the Nikon D7200 are very good choices. If I have already Canon lenses, I would opt for Canon 80D. And if I already have DX lenses, I would opt for the D7200.

I am more familiar with Nikon than I am with Canon. The best advise I can give you is to head to a photo store and hold both cameras, play with them and look at the ergonomics.
Image quality with good lenses is going to be identical.

Since some time has passed and you really are starting at the beginning again, you may to consider NOT going to the DSLR. modes.
There are some really good mirrorless camerasbout there!
