Since there is no perfect exposure doesn't this ultimately become subjective? You use the histogram as a reference and then make changes to the exposure or other components of the image to get the result that you desire. Not necessarily what someone else would do with the same image at all. To me the histogram is a rather course guide that can give me some guidance.

I agree. Make the picture look like you want it to look like, and check the histogram to see if it agrees Then decide if you agree the histogram. The idea is to make an image to your liking.

Histogram is a bit like the rev counter in a car. Rev counter tells you when you are at optimal pulling/engine braking revs per gear, Histogram tells you when you are getting the optimal light range in an image. Some people drive watching the revs some drive in auto and ignore it. Histogram needs you to understand what you want the camera to give you in performance in just the same way.

I sometimes wonder why they even call them phones!

I was working for the "Wireless" side of AT&T, way back when "smartphones" were first coming out, and 3G was going to be the big deal. I distinctly remember that one of the first things we learned in our how, why, and how to fix it training was, "this instrument was not designed for primarily voice communication". As far as I've ever known "telephone" has always been just a secondary add-on.
