I am presently shooting a Nikon D 5200 with a Nikon 18-300 primarily. I also have a Sigma 150-500 with Multiplier and for really close, special work a Sigma 30 MM 1.4. I have taken some really good pic's with each of these but always wonder how would those pics look if I had a D 800 or D 810. I am a rank amateur, no that is not true, I have been an Amateur for a lot of years but am filling my bucket list through travel with a camera. Help me guys should I go big and go to the 800 or 810.

I purchased a Nikon D700 full frame camera with a 24-70 2.8 lens when I retired five years ago. I still own and use this combo but find it getting heavier as I get older.

I recently backed up my D700/24-70 with a Nikon D7100 with an 18-140 lens. I use the D7100 as my everyday walk around camera and love the reduced weight around my neck. I still use the D700 for my tripod work where the weight isn't such a factor.

If you decide to go full frame, I suggest you keep your D5200 as a back-up.

I came back to photography in my retirement last fall with a D3200 and the two kit lenses. In April, I bought a D610 and could not believe the difference in the ability of the two cameras! I can only imagine how much better the D810 would be. It sounds like you have the photography bug like I do. I would say go for it! We only live once.

filling my bucket list through travel with a camera.

I like SLR Photography, but when I TRAVEL I like Canon G16 (or G15)
Bring Both... if it is a CAMERA day, okay SLR
But if it is an adventure day, G15 is a lot easier to carry.

If you just want an excuse to buy a FF... put it on your bucket list and be happy;
but if you are traveling 1st and photographing along the process, a G15 (or G16) is a fun tool.

Looking over your interests and activities, a D610 would make sense but i don't think the 800E/810 would be of any advantage.

You've got a really nice setup to take great pictures for years to come. If you find yourself needing more challenges or a more technical camera, then pursue the next step. Not knowing you budget or what your interests are, take a look at the medium format camera's too. They are much pricier but have different abilities.

The D610 is a fantastic camera with about 24mp. The D810 is also a great camera but it is larger and heavier than the 610 and has about 35mp and a much steeper price. I upgraded to the D610 from a D3100 and I relish the move.

I'd get the D610 and use the savings on a nice SB700 Speedlight and maybe some new Glass. By the way the 24-85mm that comes with the D610 is a really crisp lens too. It is my everyday lens.

If you're working on a bucket list, and a FF camera has your interest, go for it. Consider the D750.

Ditto!! I have traveled all over the world and moved from a D90 to a D810 earlier this year. I love the functions, clarity, and the ability to crop while retaining sharpness. As for it being a heavier camera, I use a BlackRapid RS-Sport Extreme Sport Strap and barely feel the weigh...much better than having a heavy camera hanging from you neck.

For wildlife and birds I use my long lens with a DX camera for the crop factor and for scenics a FX camera for the clarity

I have the d700 and have recently upgraded to the the d810. It out performs my wifes d800 in low light. All three are great camera. I agree with you regarding the 24-85 vr. I use it when outside and the light is decent. Inside it doesn't keep up with the 28-70 or the 24-70. I've thought of picking up the d7100 for its light weight and the fact we still have a couple of dx lenses left from when we first got started. Its hard to let go of a good 18-200 vr. However how many camera can two people shot at one time.
