If I shoot raw in the snow and the white balance is wrong can it then be fixed in Photoshop CC2014 or Light Room 5?

YES - Raw or JPG can be fixed in ACR.

RAW yes.

You can't directly change white balance for jpegs in Lightroom...but you can adjust the temperature which is the same thing. Some create presets to do it.

Your main issue in shooting images dominated by snow is exposure; not white balance. Non-intuitively you need to INCREASE the exposure to get the snow white. Otherwise your meter will expose to make it gray. Usually 1 to 1.5 EV is good.

Alternatively you can spot meter on something not white in your image.

You may know this but many confuse it: spot metering differs from spot focusing.

Correct.
With Photoshop Elements you can process a JPG in Camera Raw and change the white balance or use the temperature slider.

Shooting raw in the snow...
Now that just makes me shiver!

But I can say that I haven't been cold since I moved back from Wyoming.

If you first shoot a gray card, or similar, you can use that to get a quick adjustment.

Here is a great trick if you shoot in jpeg & want to use Lightroom to adjust white balance.
Take any picture in raw & go to white balnce & run the WB in all situations & save each time as a preset.
Now if you have a jpeg image & want to adjust WB simply go to preset & apply. Works great.

When shooting snow scenes I expose in manual mode about one stop over my center-weighted meter reading and then adjust color temp in Lightroom.

Yes but please get it right in camera.

Do a custom white balance before shooting and get a good exposure before shooting.

If you want my opinion on setting your exposure (before you get 20 conflicting ways to do it and different conflicting amounts to "overexpose" )

Meter off of a grey card or your palm in the same light that you are shooting in and set your camera manually for that exposure.

As long as the light doesn't change (it goes from sunny to overcast) then you are good to go, no reason to chimp exposure.

Thank you all for your help. I hope to get it right in the camera but since I've never shot in snow before was hoping it could be corrected in PP if I get it wrong in the camera.

Yes, but shooting raw will give you the most options and better result. I would not waste my time shooting jpegs - the results will rarely be as good.
