Here's some of the Exif data for #1: Canon EOS 50D w/EF-S 17-85mm lens @ 50mm; Av @ f16; ISO 200; 1/125".
PP w/PsE8, Crop to size (min. needed on this one); Curves adjust: Contrast, Midtones and Shadows; Unsharp Mask; Artistic Filter w/Poster Edges; tweak Levels and Brightness as desired.
I don't have any set PP rules, only what looks nice to my (and my wife's) eye. :D
