Software is written for a specific operating platform such as Windows or Mac. Your SIM card can't be read or written to by a Windows or Mac computer. When you connect a phone to your computer with USB you're looking at or writing to the memory within the phone but I don't believe that's ever on the SIM card. The phone has some internal memory similar to a camera SD card and many times has a micro-SD card slot. Recovery software on your PC might, and I say might, find deleted material in the phone's memory when it's attached via USB but I wouldn't hold my breath.
At my phone store when I had a cell phone with a defect, the manager moved my SIM card from the old phone to an identical new one to move my phone service subscription onto it but he had to move my address book over with a transfer box between the USB ports of the two phones while they were both running - the old one with a blank new SIM and the new one with my SIM. The SIM cards didn't seem to have anything to do with that transfer of my personal data. Otherwise the address book would have went to the new phone along with the SIM card when it was physically installed in the new phone and it didn't.
I may be wrong but that's my experience concerning this.
