Exposure? White Balance? Flash levels? I have used all three. But not normally. I record raw files, and do a couple of test exposures to determine correct exposure, and make adjustments accordingly as I shoot a job. I fine tune the images in Lightroom for exposure, contrast and white/color balance.
Sometimes I do, sometimes I don't. In the film days I used to always bracket, but it's not so important now that we can see what we're getting. I do it when I'm shooting something where a subtle difference could make a big difference or when I'm doing something that's particularly important to me.
I very seldom use bracketing since it is so simple to edit in your software if needed.
I have used it for HDR but now mostly adjust raw files in Light Room.

I use bracketing on bright beaches and such.
Use AEB, Auto Exposure Bracketing, 3 shots, page 121 in the Canon 60D user manual.
Sometimes combined with White Balance Auto bracketing, to adjust colors, Page 100 of the Canon 60D Manual.
Together that would produce 9 shots. You then pick the adjustments to produce White balance and exposure compensation as you wish. Sometimes a lot of adjusting but it helps and becomes almost intuitive after some practice.

That's a nice feature that I learned about years ago. It's even better now that cameras can do it automatically. I still adjust manually at times - generally aperture - or I use the exposure compensation button.

I do a 3-shot exposure bracket if I am doing HDR, but otherwise the combination of paying attention to my meter settings (spot, center-weighted, averaged) and where in the scene I am metering allows me to get good exposure with each shot.
Sometimes, even with RAW files it's better to be right than adjust.

I would guess everyone for one reason or another. Your question is way too generic.
I do bracketing occasionally, if the light is tricky with a lot of strong contrast in the scene, and I have plenty of time to bracket. More often with film than digital because I have neither histogram display nor instant review available with the film camera. But I don't bracket very often.
I only bracket occasionally (rarely), and then usually manually.

I agree, almost...
it's ALWAYS better to be right than to fix.
It is amazing how much you can tease from a properly exposed image.
