Shooting Video with 7D

I've never shot video and don't really understand all the different settings that my camera has for video. I want to video an Osprey diving on fish. I have lenses ranging from 10mm to 500mm so lens selection isn't a problem. The body is a Canon 7D. So let me see if I have this right. To shoot video I put the camera in the regular picture taking mode and use the cameras sensors to check exposure. So I set my f stop to the desired DOF (what? f11 or so?) then shutter speed for the proper exposure? I usually shoot manual mode so I'm guessing that's what I should use for video? The put the switch in video and push the start button? Is that it? How about keeping it focused if the subject moves closer or farther from the camera? What are all those quiet modes about?
