I haven't noticed a lot of mention of Canon cameras. For those who own them, what do you recommend for entry l)evel and enthusiasts (I have high goals..lol) and for those who do not prefer them, can you share with me why? Thanks.

You should try the feel of different cameras in your hands - there can be quite a difference, and you want it to be comfortable and natural.

What type of camera are you considering, point and shoot, 4/3, mirror less or DSLR?
Oh dear!
Put on your helmet and safety gear. Prepare to be assaulted by the armies of Canon and Nikon. You may get a few raids from the forces of Sony and Panasonic among others.
Better yet go up to search and type in Canon vs Nikon or Nikon vs Canon and you will find a few years worth of reading.
The short of it is, decide what you want to do. Canon has a more extensive system. But, Nikon has more than any reasonable person could ever use.
Pick a system or come down to one or two from each, find a good camera store and go test drive, pick what does what you want, at a price line you can afford and feels good to you. Buttons in all the places you feel comfortable with etc.
Then jump in.

Look out here it comes. Here is my take on the whole which is better thing. Canon is better than Nikon, Nikon is better than Canon. Olympus is better that either or the other way round. Sony is better than all of them or vice-versa. Panasonic or Sony are best or maybe not. Leica is better than all of them put together but it's too expensive or maybe not. Hassy is best but you need a very large mortgage to buy them so maybe it's not. Did I forget any one,doesn't matter cause it may be better or maybe not. That about sums it up. It ain't the camera, its the photographer that counts. A master with a $110 P&S will make better shots than a hack with a 20 grand rig
Robertjerl's comment about "buttons in right place" is more descriptive of what I was getting at. Along with the width of the grip for your right hand, the overall weight, and so forth.
And boberic's comments re the importance of the competence and knowledge of the person behind the camera :thumbup: :thumbup:

For me, if either nikon or canon made a lightweight combo as good as or better than my em1, I would have likely switched. But they didn't, and probably never will, therefore I'm happy shooting my off brand Olympus.

There are some features in Nikon cameras that Canon owners wished they had. And vice-versa. There are some superb lenses in both system and most have the hope that someday, Nikon and Canon lenses will fit either! I'm a Nikon aficionado, and I can pick up many Nikon bodies and understand the controls quickly. The same can be said for the Canon folks. The two brands will continue to "one-up" each other which, I think, is good for the market and good for us as photographers. Whichever system you choose, read and SHOOT, SHOOT, SHOOT. Some folks are natural at photography ( I really envy them!) and the rest of us have to keep trying. I've been involved in photography for 48 years, and I continue to be truly amazed at what they come up with next! As others have said, buy what you are comfortable with and can afford and SHOOT, SHOOT, SHOOT!!!

Some of us don't "prefer" Canon or Nikon, we simply got one some time in the past and stuck with the system. I think between comparable models one may have an advantage with some characteristics while the other is better with other characteristics. For example, comparing the Canon 70D and Nikon D7100, I think someone who wanted to shoot videos at least about a quarter of the time should get the 70D because it has better live view and video autofocus. But for someone who is very rarely going to shoot video, I think the D7100 has better still photo image quality.

The problem with a question like this is that we have very little information about your parameters for making a choice. It's a little like consumer reports. It provides useful general information for the average person, but not really for any specific individual.
Both Nikon and Canon, and others make some excellent products. What are your goals and limitations? Does cost matter, and if so, what range are you thinking of? What do you intend to photograph? Do you expect to be a casual user or a daily user? Do you want a camera and a lens or two, or are you planning a long term investment in a system? Does weight or size matter to you? There is an almost infinite list of questions.
If you can provide a little more clarity we may be able to provide more useful responses.
