I've never taken pinhole photographs and am wondering about their mechanics and benefits. Are there any good pinhole kits for Canon cameras, in my case a 7D?

One thing you may have not have noticed is that topic titles should reflect the subject.
Your topic title should be something like: "Pinhole photography kits" or similar, not your name.
It helps when someone does a search and it lets us know what your question is about.
You can change the topic title after you post it, but there may be a one hour time limit (look above your name in the edit mode under your post)

Try doing a search yourself, entering "pinhole photography" into the search function listed on the second line from the top of this website. I remember some posts about it.

I do not know about kits for Canon cameras, but there are at least several pinhole camera kits available. I've seen them advertised online. I purchased one in a museum gift shop.
The mechanics are basic: a pinhole opening that serves as lens and aperture with a flap to cover it. No means of focusing. Exposure is by guess and by golly. Benefits: some use it as a creative tool, others see it as a very pure form of photography. Pinhole cameras are sometimes used as a teaching tool in photography classes; this is where I learned about them and constructed one in a high school class way back.

If you want to try pinhole photography as a learning experience make your own pinhole equipment.
1. Take some stiff cardboard cut to size to fit the lens mount opening, count a hole in the center, cover that hole with aluminum foil or brass shim stock, punch a pinhole in that with a sewing needle or similar tool, tape it on the body of our camera.
Your light meter may be able to take a light reading, the exposure time may be several seconds.

2. Do the same with a camera body cap. This is all pinhole kits you can buy are.

3. Get lens extension tubes or make your own tubes to get the pinhole further from the sensor thus having a longer "focal length".

More interesting pinhole photography can be done in larger format with large format film of even photographic paper.
Than you can experiment with round cameras oat meal box, or coffee can etc.
