If you are shooting in RAW you can make various saturation and vibrance alterations however being partially color blind will be a problem - maybe a wife, friend or partner could help you out in that department. Good luck.

I do shot RAW.
I am also concerned about over doing the color bit, but I will give it a go.

I like all your shots, but #1 is my favorite. The lone boat, out on that vast amount of water; tells a story.
