I have my Induro CLT 203 tripod for several years with an Induro BHL 2S ball head. I have used large lenses with no issues. I do not think that your issue is your tripod legs (unless you have a travel tripod). I agree with some the others that your issue may be with your tripod head.
your single bird and action bird shots are wonderful, however, your debt of field for the multiple bird shots need improvement.
For my money Kirk is right. I have Kirk L brackets on my Fuji and my Nikon Z. These Kirk L brackets work fit each of my cameras well and have lasted for the past 3 to 5 year and will last another 10 years+
I like the color photo best since it contrasts with background foliage.
I would go with either the Depression Cabin, Pay Phone or Storefront Pano.
I have the identical TLR in stellar condition. I rarely use this TRL since I also own a PentaX 67 II which I use more often than the TLR. Both cameras are built like tanks and about as heavy.
I, like you often use the manual focus with focus peaking on my Nikon Z6. I usually shoot landscape and I find that manual focusing is very exacting and it slow me down so that my shots are more purposeful.
On trips I usually take either my Fuji and two lenses or my Nikon Z. My camera and lens must fit in my medium size shoulder camera bag. After viewing countless videos on theft in various locations in Europe or Asia the over the head shoulder bag is the best safeguard to camera theft.

I do not have a Nikon 850, however I do have a Fuji X-T2 with extended battery grip and a Nikon Z6 both camera have Kirk L brackets. I had a Nikon 610 it also had a Kirk L bracket. the Kirk L brackets fit like a glove. I have a good friend that has a RRS L bracket on his Nikon 850. For the money the Kirk L brackets are just as robust and fit as well as the RRS L brackets.
