I am going to study all your responses!
Yes, must improve exposure and shadow recovery.

What was kind of disturbing was my daughter was taking pictures with her iPhone and the pictures look pretty well exposed her well my pictures looked too dark in some areas.

Checked camera:
- Metering mode: Evaluative
- Manual Selection: 1 Point AF
- EC: 0
- Al Servo AF

The Problem with darker areas showing up as TOO DARK is pervasive, not only with the mushroom pic. That is why must solve problem. Appears solution is combination of camera settings and processing.

I aim the viewfinder at a darker area, then recompose picture. However, it sounds like that may not hold the exposure. If that is the case, how best to focus and picture AND meter the exposure? Where to aim at a scene with high dynamic range?

In digital photography, you avoid blowing the highlights, while pushing the RAW exposure to the right as far as possible, without blowing the highlights. The easiest way is Canon's Evaluative metering, paying attention to where the highlight warnings fall, not the histogram shape / position. Then, you process the RAW file.

Camera is on evaluative metering. Question regarding when take photo what to focus on, what steps to take?

Thanks to all. Lots to absorb!

The 6D Mark II has limited dynamic range. Reading up on how to deal with that.

By the way, decreasing the shadows helps a lot. For general Lightroom treatment I usually have the highlights at -85 and shadows at +85.

Given the large dynamic range of the scene, what is the best way to meter for best exposure?

I focus on the dark area, keep the shutter halfway down, then reposition the viewfinder and shoot.

Yes, must learn more about processIng! But the first disturbing fact is that when even when I expose for the dark area, the picture does not turn out lighter. I can see in the playback that there are very dark areas.

Could it be a bad camera setting?

Photo was taken straight on, not through any medium. Problem with dark areas observed on many photos, not unique to this particular scene. But the setting is: https://www.123rf.com/photo_26060839_stockholm-february-04-stureplan-with-the-famous-mushroom-svampen-and-kungsgatan-behind-on-february.html

Raw file of photo and histogram from Lightroom. Camera is 6D Mark II. Dark area is a mushroom like structure that should not be so dark!

The banding is because I took a picture of the picture on my desktop with and iphone!
When I raise the dark areas, it makes the lighter areas hazy.

No, the problem is that I exposed for the darker area yet the shaded area is very dark. Other cameras did not have this problem.

Is there a color calibration of some kind that?

Sample photo that shows how dark the shaded areas are.
