We did a one week motor coach based tour of Ireland in 2018. I shoot APS-c and used a 17-50mm/2.8 for 56% of my shots. My 12-24mm was used for 35% of my images. The balance were cell phone shots.
My current backup philosophy is to carry only my latest DSLR (even though I have another very similar body), have my wife take her 1" sensor ZS100 and both take our Pixel phones.

A very nice fixed focal length camera - if you have a spare $5k to spend. And certainly not "telephoto" that the OP stated as a requirement.

As others have mentioned, a mouse would be a good addition. I have a 13" touchscreen XPS and still prefer to mouse it. For editing, connection to a larger monitor would be good, too.
Question - do you intend to travel with this laptop? If so, any 17" model might be a tad heavy. I travel with mine and use it for nightly copy of image files from my camera for backup purposes in addition to email, etc. I do very little editing while traveling, mostly because I do not post to social media. I just like to see what I've captured! I save my serious editing for when I return home and use my self-built tower.

I've never replaced a sky, but I have a couple of images where it might make an improvement if done subtly.
As far as film and paper processing goes, dodge and burn is leagues away from sky replacement as far as photographic "honesty" is concerned, IMHO.

Your configuration is excellent for post production. I might add that the XPS also comes in 13" versions and that Costco usually has a good deal on one or two variants.

We do the same thing. And once you have bought from them, you get unadvertised sales through email. Maybe not 50% off, but often 30-40% plus free shipping. We have done one for each of our trips for our personal use, but I think the results would be saleable if that was the intention.

Your photos are never "in" the LR catalog. The catalog tells LR where to find the individual photos on your computer as well as storing any develop settings, metadata, etc. As such, you decide where to store the image files and in what directory or folder structure. Think of the LR catalog much the same as the catalog in a public library. The catalog contains lots of information about an individual book, including where to find it, but it does not contain the book itself.

Depending upon size, Hoya has as many as eight different polarizers available. It would be helpful to know which series you have as well as what aspect of it is unsatisfactory.

I agree with both your recommendations, however this card can't write at 250MB/s either. The advertised speed on SD cards is almost always the read speed, with the write speed often about half that value. Lexar claims 120MB/s write speed for this card, which is still probably overkill.
