The first two would do . With IS and the ability to boost the iso there should not be a problem.
Miss it except the smell of sepia toning. Hate the rotten egg smell.
A 200mm would equate to a 300mm shooting with the 300s which is a dx format. Getting a VR lens would assist in stabilization. I have purchased several pre-owned lenses with wonderful results. Only deal with reputable dealers. I use KEH.
I have a simple method on screwing filters onto the lens. Lightly place the filter on the lens and turn it the opposite direction till you hear it click. It then should be ready to thread onto the lens.
You are giving up the US warranty. If you can live with that, go for it.
I use a thermal bag. It does two things, protects camera and lens from the heat and conceals the camera from prying eyes.
One thing I haven't seen mentioned is the higher number of shutter operations the pro model cameras have over the prosumer camers.
I still use my old 55 micro nikkor on my old D300. I know it is manual, but with micro focusing is critical so the manual focusing work wonderfully.

I used film much longer than digital. Had my own darkroom for processing black and white and E6 slide film. Quite a learning curve going to digital, but enjoy it.

Epson is hands down on of the best. I am using a 2880 but am wanting the 3000 just because I don't have the switch from matte black to photo black. The inks are quite expensive for the 3000 but are have much more capacity than the 2880.
The only noise I have heard in my 70-200 is the stabilization activation. It is the same sound I get when using stabilized binoculars. Just a click.
I, like most of the others, use a scanner for the copy work.
