You may or may not be able to restore all of the pictures on the card. If you have written to the card since it was formatted it may still allow you to recover some pictures or maybe not.

You might be able to use FastStone Image Viewer for what you want since it does offer basic adjustments (it is free).

Elements does not use your Lightroom catalog at all. If it isn't removed when you uninstall Lightroom you can just delete it since it would no longer be needed. You would not lose your pictures when you delete the catalog because your pictures aren't stored in the catalog.

In any case, if you have a new computer with a new operating system, I think you should consider using current Adobe software. That means the Adobe $10/month plan which will put the Creative Cloud app on your computer and you control it, not your IT guy!

Can you post a screen shot of the color part of your question and a screenshot of your export settings?

Your IT guy should not be pulling Adobe apps from your old computer. Nor should you. The apps come from Adobe. Yes, if your were keeping image and catalog files on the old computer's drives, those need to be brought to the new computer. That's a routine process.

If you were using Lightroom (cloud version) and Lightroom Classic got loaded onto your new computer and you don't want it, just uninstall the Lightroom Classic an then download the Lightroom (cloud version) and install it. There would be no reason to try to copy it from your old computer to the new one.

I like to keep my photos on my computer or an external hard drive an is the reason I would use classic rather the the cloud based version.

If you want to do weddings professionally you will need at least two cameras, two off-camera flashes, wireless trigger and wireless receivers for the flashes, few decent quality lenses and a sturdy tripod. This is about the minimum equipment you would need.

Bump your ISO up by one stop from where you normally use it and the lenses will work the same as f:/2.8 versions at your usual ISO.

When you are getting ready to start put a gray card in a shot. You can then use the gray card in the shot to remove any color cast. Then just copy the corrected color setting to all the other shots taken in the same light, and you should be good to go.

I'm not sure that you can recover photos after formatting the card. I have used several of the recovery programs that have been suggested when photos have been deleted but the card wasn't formatted. I have had good success using Recuva.

Setting a custom white balance when you take the shots could help keep from picking up unwanted color cast.

At normal 300 pixels/inch would give you a maximum print size of 16.5x11 so you probably would not have enough pixels available for the two sizes you asked about.
