Being an outdoorsman all my life and an on and off amateur photographer, most of my shots do not have a lot of thought going into them therefore "opportunist" tag. I was pheasant hunting when I spotted the Snow owl. Not many trees where we were at (north central SD), hence the pole perch, but have to take what is given. This bird was as white as they get and contrast almost non-existent even when edited.

You need to spot meter with EV+1.5 to get detail and white. Or use spot and M mode and set meter to +2EV.

Because it is overexposed and you clipped the highlights. You can't get back, what was not there to begin with!
