Also try the hop on hop off buses. Great way to see the sights at a reasonable cost. I think 20 Euro?

If you are in one of those tourist trap pick-pocket type crime areas, I'd stick to using a cell phone or chain my D850 to a Rottweiler Dog. Or some street urchin will think it is Christmas and you are Santa. In case you had not heard, Italy and Greece are more or less broke. Sorry, but I'm a fan of US domestic travel. Here at least they'll have to shoot you for your camera.

I was there this past summer. I had my D610 and one lens 24-70mm F2.8 That's all you need. I had no issues with anyone trying to steal my camera.

I would never take a D850 to Rome. It is the pick pocket capital of the world. You will have it taken along with any lenses you take. YOU WILL STICK OUT LIKE A SOUR THUMB. BEWARE THE HANDS. You will never seem them until your stuff is gone. My Sony pocket stays in a belt pouch, much safer and I can get all the shots I want and hold my wife's hand.

bring the D850 and the 16-35 f4, 24-70 2.8 lens wider the better for many of what you will see

We love Italy and Tuscany in particular. You didn't say if you had access to a car, or if you were on a tour. If you can, getting out of the cities into the countryside will be well-rewarded. We spent 2 weeks in Italy a few years ago and rented a car, which allowed us to explore and get off the beaten path. We did go to Rome, Venice and Florence, but the day trips we took were the most fun we had.

I took the same time trip last year. Three days in Rome nine days in Florence. I didn't want to haul a ton of gear so I took my Nikon D7200 and Sigma 18-250. For me it worked perfectly. So I suggest you using your similar set up. Enjoy your trip

Two years we went to Venice , Florence, Verona, and Rome.
I took my Nikon 55-300 and 17 -55 lens. I used the 17-55 more than 90% of the time. If you have it, take a very fast wide angle prime as most of the museums and churches will let you shoot, but not with a flash. If I was doing it again I would take the 17-55 and a wide angle prime with a f/1.2-1.8 range for the low light situations and leave the longer zoom at home. Hope this helps and have fun.

We were there in 2015 and went to the same places you mentioned. I had my Sony A6000 with the 18-50 mm lens and a 19mm lends. These worked great for outdoor and indoor shots. Most places you can't use a tripod. Have fun and enjoy the history.

ps
i thk the pickpocket/ theft thing is overemphasized.
i have spent 6 weeks in Italy in the last 2 years and have not had a remote issue.
nor has anyone I have traveled with.
warning on a crowded bus? sure, be careful.
walking down the street getting your gear stolen? not likely i would say.

The less you have to lug around the better for you. Also, keep your wallet close especially if you will be riding the trains as the gypsy pickpockets tend to work on travelers burdened with baggage while boarding their trains.
