Just curious about the "specular" highlights on the flies (and to a lesser extent) those on the flowers. Are these the result of using flash? or small particles? (if so, what are they?) Anyone know?

I suspect the white dots are pollen, or similar, scattered among hairs and across wings of flies, and on flower petals. Bright sunlight or a speedlight would make then appear quite bright. The most obvious specular highlight (irregular reflection) is on the shiny shoulder of first fly.

I've noticed it on some of my flowers. I don't photograph very many bees-- I have seen them with great yellow clumps hanging on their legs. I'll try to catch a few later in the year. Right now, it's threatening to snow tomorrow morning here in Portland.

Is that the humidity too? LOL. I grew up in Oklahoma where it would get to 90 and 90 by 10 am in the summer. Ouch!
