I rented a Sony for a couple of shows so I could use a particular lens. Both times I had issues in the first few hours getting the settings to stick. For example, I had to set it to shoot in RAW multiple times before it seemed to be a permanent setting. Similarly, I went through the entire menu putting everything where I wanted it and it took several times before it seemed to be persistent. This happened both times and the guys at the camera shop didn't know what was causing it.
Anyone else have an issue like this with the A7IV?

I don't understand the use of the term "persistent" in the context of this problem.

Quite often, the lens that you may use with your recent Sony body may not have been upgraded to a firmware that covers that body. I had this issue with a Sigma lens on my A7iv. Once the lens firmware was updated, the eye focus was much better. On the other hand, there is no way a lens would cause the camera to change from RAW to jpg. The A7iv has two cards for memory. Why don't you program one for RAW and one for jpg?
I know this sounds too simple, but did you hit "ok" after making your setting selections. If you didn't the camera will stay on its default or last saved settings.
The key takeaway is that you rented the camera. You have no idea what the last person to rent the camera did to the settings. I would first reset the camera back to a factory reset, then make your settings and be sure to ok them .
This is from Sony on how to reset back to factory settings:

Thanks all. The only similar behavior I could find on the internet was for an older model Sony 2014ish post. They suggested turning the camera off for 30s or so for the settings to stick.
I'm pretty sure I hit OK but I remember cycling the power pretty quickly after changing settings so maybe that was it. The rental lens was a new 50mm GM so I think the compatibility should have been good.
Its hard to remember exactly. I was in a panic first time to NY missed my subway stop to Penn Station ended up in a dark platform in Brooklyn.
Eventually the settings stuck and the problem went away until the next time I rented the camera and everything was default. The rental shop thought the camera might have been in a demo mode?
