Looks like the person who did that is like my wife: Run cow past bonfire, up wind; slice and eat.

Me: Slice up cow, throw on grill or in iron skillet and when the smoke alarm calls the fire department it is done. Yes, I actually like my meat medium well to well done. If I am starving I will go for "Crispy = charcoal around the edges".

That is me in classroom mode before I retired from teaching. Now I am more Winnie the Pooh and hardly ever grouchy.

I used to go to a BBQ place near Paducah, Kentucky that had their sauces on the counter labeled - Tourist, Wimp, Normal & the secret 4th one was under the counter. You had to know to ask for it. It was sort of homemade napalm with cayenne flavoring. And boy was that stuff good with shredded pork BBQ on toasted bread. I used so much, the toast started to fall apart. I am older and use a bit milder sauce these days, but not down to the level of Normal. When I BBQ or make Chili-con-Carne I make two batches, one for myself and our one kid who is a Chili Head like me and one for everyone else.

I'll take a "cool pink center" steak most of the time but, in summer, and being too lazy to crank up the BBQ or clean the stove afterwards, that steak will end up very thinly sliced as carpaccio or vigorously chopped for steak tartare... In both cases I "wing it" depending on ingredients on hand and never get the same flavor twice- but always great.

My dad loved it and ate it raw with a raw yolk quite often...I was completely grossed out by it at the time.

Years later while in Canada...I saw steak tartar on the menu and thinking of my Dad...decided to give it a go.

What a difference attitude makes...wow...so good.

But raw pheasant is probably the best I have ever had...followed by duck...then steak.

I remember a movie I saw back in the 70s (so why can't I remember where my glasses are?), called - I think - Bazza Mackenzie. He was Australian, but I can't remember anything about the plot. Anyway, when pressed by a waitress for just *how* rare he wanted his steak, he replied "Just blow its nose and wipe its arse, and bring it out here!"
