If you convert your RAW files to DNG, be aware that the latest update has a bug that will remove the color tags and rating tags from the files after conversion. Until this is fixed, best to convert to DNG upon import....
Anyone converting RAW in June 2022 to DNG is wasting their time and effort. Just import those RAW files directly into LR and work on the file in the native and supported format. Do more work in less time, like a real photographer.
How do you go about changing the setting so it doesn't convert the file to DNG?

Look at your import panel and change the settings.

Yes, DNG has its uses, but if you are using Lightroom or Lightroom Classic, don't waste your time converting raw to DNG unless you have a specific, probably commercial need to do so. Keep your raw files raw. Process and export as PSD, TIFF, JPEG, PNG, or whatever makes sense as an intermediate or end product, depending on your workflow.

If you are using LR the only time you need to convert to dng is when your camera isn't supported by the latest ACR supported by your current LR.

Select "Copy" at the top of the import screen.

Why convert Raw to Dng in the first place.
Just use the Raw files.
