...the guy shoots Jpeg, hard to blame the camera. Well, I guess you could fault the stock rendering, but there're tons of options in-camera, eh? I've always liked Nikon's colors, but, then, I'm a post processer from RAW so it's totally on me, anyhow. <shrug>

If shooting RAW data all kinds of manipulations can be done to colors. OM Digital Solutions, former Olympus, has excellent, natural colors when using their Super Fine JPEG.
Although I shoot JPEG Super Fine often I like the flexibility of RAW data.

I have read more than a few posts about Nikon's pleasing skin tones. Have not heard about the preference for Fuji's color renditions.

I've always been a big fan of Nikon color. The files are very easy to work on with minimal adjustments needed.
