Lobster Bisque - the broth

For NYE dinner I made Lobster Bisque (this was a first for me).
Lobster tails are very expensive - shockingly so. 😲

The first step is to boil the lobster tails, remove the cooked meat (to add back into the bisque), saving the tail shells and reserving 2-cups of the lobster water.
The second step is to make the broth, which is the photo posted below. You sauté the usual (onions, garlic) in butter with chopped celery, then add the reserved lobster water, chicken broth, wine, various herbs and aromatics and simmer for about an hour.
It smelled delicious.

I made the broth a couple days ahead of time and then NYE made a golden roux, added back the broth along with heavy cream and the lobster meat. The lobster meat was perfectly cooked by the way.

It tasted fantastic, but the bisque consistency was a bit thin, not sure why because I followed the recipe exactly.
I would like to try this again, this time getting the bisque consistency correct.

Good shot! Great minds, we had "Fishy Soup" for New Years Eve including lobster tails as well. I have run across problems with the amount of liquid in quite a few recipes. I follow the rule "You can always add more" reduce the quantity or add more when in doubt. I'm certain it was delicious and next time will be perfect. Speaking of sticker shock - a small Prime Rib at Costco $100!!! I passed!

I love lobster bisque 👍👍. Prime Rib everywhere every year was through the roof. I buy a 7 bone standing rib roast every year. This year prime at Costco in NC was $340-$360. At Whole Foods in the past price ranged $$200.- $225 this year $ 378. $19 a pound $ 14 for prime members. Where is Santa when you need him

Such an Appealing image of a Lobster dish!! Oh My!! Crowd pleasure for sure!!

(I think I might have to get a new keyboard - I'm wearin' out the Exclamation Point key on this Food section of UHH....)
