I gave a rather snarky remark to your very valid question. I have a Mid 2011 iMac desktop, but put a 1tb Samsung EVO 860 in it, runs great and fast. But, here lied my issue, the Graphics card was not compatible with the 2021 Photoshop CC and Lightroom Classic CC and a few other Adobe Creative Cloud programs. I have Topaz Sharpen AI and DENOISE AI, funny thing is, is the very fact that while slow on my iMac they worked. But, my neighbor bought a MacBook Pro with 8gb Ram, 256gb memory, and it has the M1 chip processor. So, I hooked it up to my BenQ SW 2700PT 27in. Monitor and those programs fly. Now, I was lucky because his employer gave them an open checkbook to buy whatever they needed, so he sold this little gem to me for $950. He then turned around and bought the 15in MacBook Pro 32gb RAM and 1tb of memory. Now, he is going to sell me that for half the price and the box has not even been open. His company just does not care. But, back to you, I suggest that you buy an ext. Monitor BenQ and spend the $1300 for the 13.3 in MacBook Pro, hook it up and put your worries to rest. Reference Topaz Sharpen AI - instead of doing it yourself - all I can say is everyone should try it - they offer a 30 day free trial. As far as I am concerned it is magic that I could never hope to replicate myself.
Get use to AI because that is where all photography software is going. You can set your styles with the use of templates,Luts, plug-ins depending on which software as a start. The AI will then be able to offer its learned enhancements and still give you the ability to tweak.

I suspect the steps shown are simply 'filler' while you wait...
