I'm heading to Cabo first week in February that will include a whale watching tour. Is it safe to bring camera gear? Planning on D7200 and a couple lenses (18-400, and maybe 10-20). Alternatively I could just take an Olympus TG-6. In general, any issues taking gear in / out of Mexico?
No real issues but there is one customs form I filled out about ten years ago listing my equipment but I have never had to use it. I wouldn't worry about it.

Your gear will be safe but whale watching in Cabo in the middle of a raging pandemic doesn’t sound safe at all.

The word 'group' already suggests a breeding ground for the pandemic. Be careful!
When you arrive you will be in a huge line in the immigration hall. The last 3 times for us there were more than 1000 visitors jammed together in the long maze line, passing each other about 8 times before reaching passport control. I can't imagine a more dangerous place on earth during the pandemic.
Cabo is very safe in the tourist areas but I wouldn't carry anything more than a point and shoot on the streets at night. No problems bringing gear in or out of the country. Carry a list with all serial numbers and have good insurance and you will be fine.
The immediate responses here show a sense of reality and care for others. Airport, airplane, hotel, restaurants, crowds of people you can't trust. Semi-Private? And each of you attending will provide up to date Covid tests? Let me know how the crew handles this as well! And, now you go....; depending on state in which you live; may need to quarantine for a while. Good thing I avoid these places. Getting shot this Saturday in NY! The lowered the age limit and here we go....
I’d just take the TG6 unless you plan to do some touring... but even then

Sooooo, no one in your semi-private group will come into contact with anyone NOT in your group? Just trying to visualize/understand the logistics of that. How will you all get from your home location(s) to Cabo? Being shot out of a canon, maybe? Where will you stay while there? Are you bringing enough food/water/other essentials so you can remain in your very own "semi-private" bubble for the duration?!?
And people wonder why the virus is tearing through our population. That's it from me re: what I consider to be your irresponsibility and disregard for those around you who are following guidelines to keep themselves and, by extension, those around them safe.

And you now need a negative test, done within 3 days, to get on a plane to get back into the U.S. Per CDC.
