I'd skip Disney and Epcot for all the rest suggested. I'd much rather immerse myself in history and nature than a bunch of screaming crowds.

I suggest visit Kennedy Space Center Visitor complex. You can book a tour to get close to the SpaceX launch site and witness the launch. While you are there, be sure to see the Atlantis Space Shuttle display, and the bus tour to the Saturn V display. Both are extremely worth while! I worked at Kennedy Space Center for 42 years; lived and worked through the Space Shuttle era, and I am still held in awe at these displays. Visit this website to make your plans: https://www.kennedyspacecenter.com/

When in Orlando with two 10-year-olds to do Disney World 24 years ago, last day was rainy. We discovered a really great factory outlet mall.
I still think the kids enjoyed the mall more than Disney World!

Kennedy Space Center & Brevard County Zoo. KSC will be crowded the day of the launch but you can buy tickets to view the launch. Check their web site

There are good suggestions here, particularly St. Augustine.
Avoid Orlando and the associated tourist & Disney traffic.
Here are a couple of sleepers that only an old Floridian might know.

Bok towers is beautiful, but in the middle of nowhere. My wifes’ Grandmother lived near there in Frostproof, Fla. If close enough it is a nice area.

Drive inland and take an eco tour in the St Johns River (https://stjohnsriverecotours.com/). Bring your longest reaching lens and get there early for a front row seat. Rain or shine, you will not be disappointed.
