Headed to Florida for the Space X launch (Orlando area)
Other than Disney and Epcot center what are the must things to do and see in that area
any advise would be appreciated.

No advice to advise. Use your own eyes.
If you like birds/wildlife, go to Merritt Island Refuge, Cavernal Seashore, Gatorland, Orlando Wetlands, etc.
Merritt Island Refuge is a must !
Another vote for Merritt Island and Orlando Wetlands. Orlando Wetlands, there are alligators, lots of them, maintain your 15 foot distance, many birds as well. Cocoa Beach if you want to shoot surfers, lots of good action pics there. If you go to Cocoa Beach go to the Florida Key Lime Pie Company on Dixie Lane to the north of the Ron Jon Surf Shop, the best Key Lime Pie I have ever had!!!

Go to the Navy Seal Museum in Fort Piece it is excellent
Aside from the other suggestions, look into St. Augustine, and Blue Springs state park (manatees, if it is cool).
Daytona Speedway, and the AE and Museum
Opopaka wetland west of the city is open friday,saturday and Sunday for driving tours. Great place for bird and aligator photography. From the safety of your car. Old lettuce fields the water authority bought to improve the lake's water quality. Amazing birds and wildlife.
Gatorland lets photographers in at 7 or 8 in the morning, for 3 hours before opening for the general public. Where you have gators, you have birds: cranes, egrets, storks, herons, flamingos, and more. Not to mention gators. It's a great morning which you can follow with a nice breakfast somewhere.
ST Augustine, the old Fort and more. The older Jacksonville neighborhoods. The Barrier Island south of St Augustine has some fantastic plant and flowers along an easy trail.
