What would you do....
I am a hobbyist only...I purchased the Sony a7iii with a 24-105 lens a few months ago to use for travel.
I have been a Nikon shooter and love my D7500 and the great lenses (16-80, 50, and 70-300) I have with that system....
however, the Sony is just so amazing that I am shooting with it almost exclusively....(I take photos for my own pleasure, do not do anything professionally and am certainly just a fairly competent amateur)....
now I am thinking I should sell my Nikon equipment and use that money purchase another lens for the Sony....
Should I do it? Pull me back from the ledge if I will regret that move!!!!!
Since you are a hobbyist and you love Sony so much to me it is a no brainer. The D7500 ( although) an excellent camera, it will continuously lose value and when you are ready to sell you won't get very much. Take the plunge and commit to the sony system. It is a win-win for you.

If you are just a hobbyist, is there really a need to have both systems?? It seems from what you have said, that you really like the Sony system and you pretty much only use that, I guess my choice would to 86 the Nikon system.

I would say, go with one or the other and never look back. This is true of many things in life, including photography.
Photography, whether as a profession or as a hobby, should make you happy and satisfied. If the Sony meets all your needs and desires, makes you enjoy your hobby, and produces photos that are acceptable to you, go for it. Nikon, Canon, Sony, or any other brand, they are just manufacturers of equipment to use to pursue our desires.
In those circumstances, I would sell & get another lens.
You indicate that the Sony is becoming your go to system. I have had a similar experience and now shoot Olympus EM1 MK II. However, I held onto an 'old' Sony A700 (first gen Sony DSLR) but seldom if ever take it out to use.
I would suggest selling the Nikon gear and purchasing one or more additional Sony lenses.

Sounds like a game plan to me. Unless you have a specific reason for keeping the Nikon, image quality, number of pixels, etc., I think selling the Nikon equipment for a new lense seems logical.
Since you don't use it sell it sooner than later while the equipment is current and somebody else can enjoy it.
Story: I just sold 5 film bodies, 5 or 6 lenses, some extra (expensive) accessories at a KEH buying event and got $500+ (and was THRILLED) for what represented $4-5,000 of gear at original purchase price.
Supporting two systems without a good artistic reason is not a supportable expense for a hobby.

As you are discovering, the Sony A7iii is an amazing camera, all the way around. It seems, from what you say, that it is rapidly replacing your D7500 as your go-to camera. I'd recommend selling your Nikon gear, both camera and lenses and indulge yourself in a new lens for the Sony. One of the very good full frame lenses is the Sony 70-200 G Master lens. Great for landscapes and a lot of other applications.

Jump now, before you change your mind. I have been a Nikon shooter since 1967, but 2 yrs ago I picked up an RX10M4 for travel. It is stunningly good, and my friend's A7III is even stunningly better - than my D810.
Sell the Nikon stuff while you can, and get some more Sony "stuff".
