Depends on what you like in landscapes. Is it the grand scene or would the Tele give you the reach to capture the more intimate scenes. In vast areas you are going to you may want that reach and regret not bringing it.

I'm going for about three weeks to Zion, Bryce, Arches, Capitol Reef, Grand Canyon National Parks, flying from North Carolina. Should I lug my Nikon 200- 500 f56, or, be satisfied with my 18- 105, and 55- 200 kit lenses?

I would definitely take the long lens for getting up close and personal with a few of the areas you don't want to have to crop much. Great area for a visit

Took that trip last year and since I switched to Olympus OMD 1 mk2 micro 4/3s system I took all my lenses that now fit into a very small pack: 12-40mm, 40-150mm, 75-300mm, 45mm. Used them when appropriate. We did some hiking and carrying the olympus was a pleasure. I'm turning 89 in a couple of weeks and hauling a FF 6D with associate lenses would not have been fun as I did 4 years ago. Have a fun trip.

I just returned from a week visiting Arches, Bryce and Zion. I carried my Canon 80D with a 24-105 L f4 lens. Lots of hiking in Arches and Zion so the gear was a bit heavy but manageable. At Bryce you drive to various overlooks and it was easier on this 74 year old body. In Zion you park and use the shuttle to visit various spots; in Arches you can drive your vehicle to various spots and then hike. Each park has its unique beauty. Hope this helps.
