Why cull? Have you ever made pear jam?

The last time that I made it, I cut the amount of sugar in half and it was even better, tasting the pears over the sweetness.

I found that if I cooked down the pears as I found them, and froze them until I had enough to make a complete the recipe, that the color and flavor was better. The color needs to darken slightly which only happens if you cool down the pears then re-cook them a second time when you then add the sugar and other ingredients. There used to be a recipe for pear jam inside the Certo package.

Sure hope I'm wrong about the farms that the floods destroyed last month. We really need the farmers more than ever.

I feel very sorry for all of the people who suffer loss like this, and we all suffer when the farmers have problems.
