The point I was trying to make is that if it had been shot in dng format on my phone, it would have had more dynamic range and the sun probably would not have been so blown out.

I understand when you have something that blown out there is no data there but I don't think that means it can't be reconstructed. It depends, of course, on your pp skill level and how valuable the photo is to you.
