The best (and most expensive) camera I have ever owned and I've owned some pretty good ones. Since you own a D7100, the D850 shouldn't be too long a reach. The controls have moved, but the functions and menu are very similar. I moved from a D7200 to a D500 and then a D850 (D850 and D500 have virtually identical controls and AF systems). Highly recommend you pick up David Busch's Nikon D850 Guide to Digital SLR Photography. Here is an online D850 tutorial that I found helpful.

Great images . I can also recommend Steve Perry's stuff on autofocus etc. There are lots of settings on the D850 that can make your photography easier and more effective , like instant switching from say Dynamic 9 point to single point in the middle of a shoot . Steve Perry goes through these and makes suggestions . Focus Peaking in live view is great as well, have a try.

I have found that the D850 makes all of my Nikon auto focus lenses SHARPER. Love this camera, it is the bomb.

Steve Perry, a member here, has a book that is worth owning. It is inexpensive and it's about 400-500 pages. He goes into detail on the Nikon focus system. Photography How-To Books And Videos - Backcountry Gallery

Looks to me like you have figured out a lot of the challenges. These shots are spectacular.
WOW, if that is your beginner photos think what your shots will look like after you figure it out! They are great!
Watch Mark Smith you tube videos. He is an expert in wildlife photography with the D850. It a great video camera with the slow mo mode in video. Auto ISO is the way to go with the D850 in full manual mode. This way you control the iris and the shutter speed to get that great shot.

Auto Iso is not advocated for use in every circumstance by Mark or Steve Perry. Steve has an excellent video on this subject:
