I always use hickory or white oak with pork and it always gives me good flavor. Thank you for looking and the comment.

sourdough58, The riblets were seasoned with a little salt pepper and garlic then Kosmos Q honey killer bee dry rub. They were cooked with indirect heat on the grill grill at 275 degrees until the internal temp of the riblets reached 175 degrees. I then pulled them off the grill and put them in a pan sprinkled them with brown sugar put a pat of butter on top of each of them and then poured Killer Hogs bar-b-q vinegar sauce over them. I then covered the pan with tin foil and put in the oven with temp set at 275 degrees till the riblets reached a internal temp of 195 degrees. They were ready to eat then. I did not time anything but the whole cook took between 4 and 5 hours. They turned out Great. Thanks for looking.
