It's Crawfish Time in South Louisiana!

Our many Drive Thru and Drive Thru/Dine In Boiled Crawfish Places are started to open for the season. Regular year around restaurants have them on the menu as well. A little late start this year due to our December weather. Early ones are small, but they get bigger as the season progresses. Yummy.

Now you are really making me homesick rchuck1. To late this year for my king cake order from Randazzo's, already sold out, so I had to order from Gambino's.

Yeah, we have a Gambino's here in Lafayette. These days, there are many variations of the basic king cake.

As kid we would see the mud bugs crawling up out of their mud mounds in the marshy areas around our ponds - we never thought eating those critters was a good idea.

There are many different species of crawfish in the U.S. and the one that’s grown in Louisiana is the Procambarus clarkii, known variously as the red swamp crayfish, Louisiana crawfish or mudbug is a species of cambarid crayfish native to freshwater bodies of southern and southeastern United States.

I'd never think of eating one of those ugly things either, but can you imagine WHY the first person to ever eat a chicken looked at it and thought that might be delicious? LOL!
