Another is timing. At the country club where I once worked the house manager would sometimes scoop up some freshly ground hamburger and eat it raw. Once the E.coli is folded into the patties it begins forming colonies. Early on the colonies aren't large enough to do damage. If those patties sit around for a couple of days a person could be in trouble eating them raw.

I don't worry about getting sick although I do got sick from time to time. Rare steak simply doesn't taste good to me. I ate them because I can't always have them prepared the way I want which is well done. When the meat is not done it doesn't have the sweetness of well cooked meat. Same thing with vegetable and I usually eat may vegetable raw but when I cook they must be well cooked. I hate vegetable just blanched.
