PS CC Pen tool... INCREDIBLE!!!
PS CC pen tool is easier to use than ever.
Forget the keystrokes and other options, most of it is done w/o them.
Try it if you have the newest PS CC version.
50 minutes later... (and many soundtracks)

Eliminated a couple of things like the stick on the left
Gaussian blurred the background.
Sharpened and modified the luminosity...

You look, analyze, and make changes the most economic way. I have watched so many tutorials where the "expert" wanders to the finish line to fill the hour. Too few look and say, "I need to change the following things with the following tools to end up with a finished product. The reason I will make the changes is..."
You explain well Rongnongno. In tutorials for many instructors, translating the intuitive to the how-to-cookbook, steps is difficult.
Unfortunately my old (late 2014) iMac is not really up to the latest version of Ps so it’s easier to stick at 2020. I do however favour the pen tool for serious selection, followed by ‘select and mask’ for any feathery stuff. It’s an amazing tool.
I also use the pen tool for precise cutouts. I'm not sure how much easier it is to use than the cs version of photoshop. I do believe the more you use it the easier it is to use. It takes a lot of patience to learn and experience to get proficeant. I've found I take less and less time the more you use it.

I also use the pen tool, almost in regular basis. The new implementation is way more intuitive.

I frequently use the quick selection tool and then select and mask (to new layer). Sometimes it works and sometimes it doesn't, depending on the background. When I have real problems I use the pen tool and modify the mask. I use a trackball and it has a button to reduce the speed of the cursor for fine work.
