So, for Burger Night appetizers, I decided on Potstickers (yaki-gyōza, Peking ravioli, guōtiē, Gyoza... or Pot Lickers as my Dad called them!).
So... we did a little taste testing with condiments on hand (left to right):
~ First, on left is the packet of sauce that came with the Potstickers. It was kinda like a thicker Ponzu with a bit more salt. Decent stuff!!
~ Second is one of my Fav sauces called Spicy Chili Crisp. It's kinda like eating Paint Chips only VERY delicious and semi-hot. LOTS of flavor going on here - overwhelms the delicate Potstickers in our opinion.
~ Third is a favorite for Potstickers in our home. Citrus-backed Ponzu - kind of a light soy sauce without all the salt and a bit of sweetness to balance what salt there is. Good stuff, that!
~ Forth is a New-Comer to our kitchen from Amazon - and turned out to be the #1 pick of the evening for the both of us! A lighter type of sauce that tastes like a combo of Teryaki, Ponzu, and Soy Sauce. An unexpected winner here!
~ Fithth sauce is Green Dragon from Trader Joe's! This was a great green pepper/chili sauce that has a nice vinegar and hot chili bite - but not too aggressive. This was also new to the Potsticker lineup and was well received!!

All in all, a very fun and good-tasting lineup!! And WHY is the Burger shown here, you might ask!?!? Well, after the Potsicker tasting, I took ALL the sauces and marinated the burger for a while before frying in the cast iron pan!!
Freaky Good burger for sure!! ....Whooohooo!!!

What a fun experiment! Great picture and arrangement. Now I am curious about the 4th sauce. I have made my own pot stickers a dew times. They are a pain to make.

Thank you, JustJill! Yeah, I just get the potstickers at the local market near here... I prefer the Asian market brands, but no Asian market near me on the Oregon coast.
The Japanese BBQ sauce is not like any BBQ sauce I would use for meat. Much lighter and thinner. It's great for yakisoba or rice dishes, general Asian food fair.
