My grandson will be 10 the end of July he is not sure what he wants for his birthday celebration so he asked for a couple of trials this week it’s brisket. Fillet Mignon is next. Family tradition has it that the birthday person gets to suggest the dinner. Sorry pics are of the iPhone variety.thanks for looking

37 hours to cook a brisket??? Wow, how was that done. I think 13 hours is plenty long time to cook a large brisket to internal temp of 204.

Sous vide method
Season and vacuum pack the brisket
Set temp at 155 F
Cook from 24-35 hours
Remove vacuum bag
Reason cook in oven @275F 2 hours

Very nice set Joe. The brisket has a very nice looking bark on it. I bet it tastes as good as it looks too.
