For so many years that I do not remember how I set it up, when I would download my pics (D7200, and prior) they would automatically go into folders by date under Pictures. After a recent Windows 10 update that stopped happening and I cannot figure out how to reestablish the process. I know I can (and have) create folders and put new photos into them, but that is a multi-step process. It is easily manageable for a small number of shots but will be a real pain if, as and when we can travel again and I come home with many hundreds of shots to process.
Windows Help was of no help, suggesting it was a camera problem, which I really do not think is the case.
Any suggestions?
Were you using Nikon Transfer?
Not sure I was aware it was called that, but I think the answer is yes. Direct cable from camera to computer.
I know the Canon software to get picures off the camera has simple settings for what you described and many other options. Just plug in the cable or insert the card and the software launches automatically, or do it over wi-fi if the camera has that. Set up once and it keeps doing it until you change it. Nikon is likely has similar options with their software.
Windows of course has a dialog pop up whenever a connected camera is turned on.

I have encountered the same problem. I am anxious to follow and get a solution to the problem.
I have always imported my memory cards directly into, originally, Picassa ,and now PSE which puts them directly into the Organizer.

I believe he was asking about the software used to transfer files. I use the program that came on the CD with my camera. It is also available online. While my camera is Canon, I'm sure the same holds for your camera.

If you're using the cable to transfer, there should be settings for that transfer. Just like if you're doing some batch editing and saving those edits to a folder that's different from the original. Does it just automatically start the transfer after connecting or do you have to start the process? If it's automatic then there should be a program of some kind on your computer where you can go in and change the settings of where the files are transferred it. If you're actively telling it to go ahead and do the transfer each time it should still allow you options of where those files are going, and what you want them saved under.
I personally just use my card reader on the camera each time. Not sure about your computer, but it typically takes less than a minute for me to be able to transfer hundreds of photos from my card into a folder I have set up on my hard drive.
I think an alternative might be to forget about Windows and import directly to Photoshop Elements Organizer.

As I indicated earlier, I have the exact same problem. None of the responses have addressed the problem that he and I have. The program Photos would create folders by the date of the pictures or the date that the pictures were downloaded before the Windows update but won't do that any more. I don't think that it makes any difference what camera you use or whether you use a cable or plug the card directly into your computer or card reader to transfer the photos. This does not apply to transferring photos directly into a post processing program. As Temuna indicated, we can still transfer into "pictures", but not into the current date, which requires an extra step. I request that Temuna confirm this post.

Once again, the PROGRAM (APP) supplied by my camera's manufacturer has the feature that creates folders of the date(s) the file was taken when transferring. It came on a CD with the camera and is also available at their website. I expect that Nikon offers a similar thing.
